CREAM POTATO HAMBURGER SOUP
Ingredients:
1 1/2 pounds lean ground beef
1 medium white onion, diced
1 large garlic clove, finely minced
6 cups chicken broth
6 cups peeled chicken and diced russet potatoes
2 cups your Favorite Frozen Vegetable Blend
3 teaspoons dried basil
2 teaspoons dried parsley flakes
1 1/2 cups milk
2 tablespoons cornstarch
8 ounces diced Velveeta cheese
Instructions:
Heat a large skillet over medium heat. Add the minced meat and chopped onions and cook until the onions are soft and the minced meat is browned. Be sure to drain off any excess fat.

Fry the chopped garlic until it takes on an aromatic note and becomes slightly golden. Next, add this meat and garlic mixture to your Dutch oven or large pot.Add diced potatoes, chicken broth, mixed vegetables, dried basil and parsley flakes to the pot.
If using a Dutch oven, place over low heat and allow the mixture to cook for 6-8 hours, or place over high heat and cook for 3-4 hours. If using a pot on the stove, cook the mixture over low heat until the potatoes are tender and begin to fall apart slightly.
In a separate bowl, mix the cornstarch and milk well. Pour this mixture into the soup and stir well.Add the diced Velveeta cheese, stirring occasionally as it melds into the soup. Once the cheese is fully melted and well incorporated, your hearty, creamy ground beef and potato soup is ready to serve.
